Hey, speaking of waffles and such, Susan and I made boxty for supper tonight. What is boxty? Boxty are Irish potato pancakes made from grated raw potatoes and mashed potatoes, with some flour and milk and eggs thrown in. (I am not sure how to pronounce "boxty" the way an Irish would. We discovered boxty at an Irish restaurant this weekend.) Boxty pancakes are a bit different, but highly recommended as a cooking experiment. As a related experiment. To top it off, I made some Guinness gravy for our veggie sausages. Pretty hardy supper.
